Executive Chef Bayu from Griya Santrian retraces the roots of local flavours in a fine dining culinary night Sip & Savor - Nusantara Treasure Cuisine. Menu is paired with local fine wines - Two Island by Hatten Wines.
With a zeal in reintroducing local ingredients and Indonesian dishes, Chef Bayu prepares a gastronomic adventure at the Starfish Beach Lounge, covering locally sourced ingredients prepared with fusion twist. Among them Duo of ”Cakal fish” grilled, “Undis“ bean tortellini, and ”Beef Rendang” tenderloin mushroom bourguignon. He revealed that these dishes were all-natural, no food enhancers, which ingredients can be picked from one’s backyard.
“We are proud to reintroduce these locally sourced dishes,” he added. “We are sincere in offering these dishes that are really far from the modern food we have today. Chef Bayu added that if only the young ones today can try the dishes from the past, they can appreciate more how simple these can be prepared. “This way, we can promote, too, our local ingredients. Generally, we envision a new generation who are aware of our culinary heritage and continue to pass it on to future generations.” He said,
About Chef Bayu Kristiawan
Griya Santrian a Beach Resort & Spa is delighted to announce the recent appointment of Bayu Kristiawan as Executive Chef. He has settled in Sanur following several years experience as Sous Chef in various resorts in Bali. Passionate about food from an early age, Chef Bayu started as apprentice in the Santrian Group, Puri Santrian and Royal Santrian, and worked his way up through the culinary hierarchy until he rejoined the group at Griya Santrian.
During the formative years of his career, Chef Bayu had the privilege of working at several star-rated restaurants in Bali where he developed essential skills under the guidance of experts. His position was as a Sous Chef for The Trans Resort Bali, The Ritz-Carlton Bali, and Conrad Bali. He has joined and won many culinary competitions such as Dewata Culinary competition, Meat Livestock Australia (MLA), Dilmah Tea competition, Unilever Competition, and Nusa Dua fiesta. Chef Bayu has a solid background in Balinese cuisine, but he is also well-versed in many different cooking styles. He takes inspiration from each place that he visits and likes the whole creative process of perfecting new dishes. He loves working with quality produce, where the fantastic flavours are able to shine through, and using only a few ingredients he able to create mouthwatering dishes.
He will spear head the cuisines at Wantilan, Griya Beach Corner and Starfish Beach Lounge.
